Coconut Crab Cakes Recipe

Coconut Crab Cakes Recipe

2 tablespoons oil
1 1/2 cup onion, finely chopped
2 cloves garlic, minced
3/4 cup tomatoes, chopped
1 1/2 teaspoon salt
1/2 teaspoon black pepper
1 pound crab meat
1/4 cup flaked coconut
1 egg yolk, beaten
1/4 pound butter


Heat oil in skillet. Saute onions and garlic 5 minutes. Add the tomatoes, salt and pepper and cook over low heat 5 minutes. Cool for 10 minutes. Mix together the crab, coconut, and egg yolk. Shape into small patties. Saute in butter until lightly browned on both sides. Serve hot.
