Carrot Cake with Cream Cheese Frosting

Original Recipe Yield 1 - 9x13 inch cake

Ingredients
• 3 cups grated carrots
• 2 cups all-purpose flour
• 2 cups white sugar
• 2 teaspoons baking soda
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 teaspoon ground cinnamon
• 4 eggs
• 1 1/2 cups vegetable oil
• 1 1/4 teaspoons vanilla extract
• 1 (8 ounce) can crushed pineapple with juice
• 3/4 cup chopped pecans

• 3 1/2 cups confectioners' sugar
• 1 (8 ounce) package Neufchatel cheese
• 1/2 cup butter, softened
• 1 1/4 teaspoons vanilla extract
• 1 cup chopped pecans
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2. In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt and cinnamon. Stir in eggs, oil, 1 1/4 teaspoon vanilla, pineapple and 3/4 cup chopped pecans. Spoon batter into prepared pan.
3. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
4. To Make Frosting: In a medium bowl, combine confectioners' sugar, Neufchatel cheese, 1/2 cup butter or margarine and 1 1/4 teaspoons vanilla. Beat until smooth, then stir in 1 cup chopped pecans. Spread on cooled cake.

I adopted this recipe. I had prepared it for a holiday function prior to the adoption. The comments from my original review stated, "This dense, rich chocolate cake is intensely moist. It baked perfectly and made a lovely layer cake. I will be using this recipe again for chocolate cake needs." The cake in my photo has Chocolate Buttercream Frosting, between the layers, and is frosted with Chocolate Frosting before being covered with my Chocolate Curls. It was a huge hit, and I have made this cake many, many times since.




Ingredients
:

Serves: 9

Yield 2

¾ cup cocoa powder
¾ cup boiling water
1 cup buttermilk
1 cup canola oil
4 large eggs
1 teaspoon vanilla
2 cups sugar
2 cups flour
½ teaspoon salt
2 teaspoons baking soda

Directions:

1 Mix cocoa and boiling water.
3 Mix buttermilk, oil, eggs and vanilla together.
3 Mix dry ingredients together.
4 Mix dry ingredients into buttermilk/oil mixture.
5 Mix in cocoa.

6 Bake at 350 degrees Fahrenheit in two greased and floured and parchment lined 9-inch round pans.

7 Bake until tester comes out clean, approximately 30 minutes.

Original Recipe Yield 10 servings



Ingredients

* 1 (18.25 ounce) package yellow cake mix
* 1 cup butter (no substitutes), softened
* 1 cup shortening
* 3 pounds confectioners' sugar
* 1 tablespoon vanilla extract
* 1/4 teaspoon salt
* 3/4 cup milk
* Blue, yellow and green gel, paste or liquid food coloring

Directions

1. Prepare and bake cake mix according to package directions for two 9-in. layers. Cool on wire racks.
2. In a mixing bowl, cream the butter and shortening. Beat in sugar, vanilla, salt and enough milk to achieve spreading consistency. Place 1/4 cup frosting each in three small bowls; tint one blue, one yellow and one green. Set aside 2-1/4 cups of remaining frosting for basket weave decoration and shell border. Spread remaining frosting between layers and over top and sides of cake.
3. To decorate, place reserved white frosting in pastry bag. Use medium basket weave tip to decorate sides of cake using basket weave pattern (see diagrams at right). Change to medium star tip to pipe shell border along bottom and top edges of cake.
4. For writing, use medium round tip an blue frosting to pipe desired greeting off-center on top of cake. Use medium round tip top pipe green vines around writing. Switch to medium leaf tip to pipe green leaves along vines. Use small flower tip to pipe yellow and blue flowers along vines. Leftover frosting can be frozen for up to 3 months.

Use of a coupler ring will allow you to easily change pastry tips for different designs.

25 Holiday OREO Cookies, divided
1 pkg. (2-layer size) white cake mix with pudding in the mix
1-1/4 cups water
1/4 cup oil
3 egg whites
1 tube (4.25 oz.) green decorating icing
11 ring-shaped chewy fruit snacks, any flavor
2 Tbsp. powdered sugar

Make It

PREHEAT oven to 350°F. Coarsely chop 15 of the cookies. Beat cake mix, water, oil and egg whites in large bowl with electric mixer on low speed just until moistened. Beat 2 minutes on high speed. Stir in chopped cookies. Pour into greased and floured 13x9-inch baking pan.

CUT 8 of the remaining cookies in half; arrange in rows in trianglular shape over batter to resemble a tree, pressing cut side of each cookie gently into batter. Place 1 of the remaining whole cookies at the top of the tree for the star and remaining whole cookie at the bottom of the tree for the trunk.

BAKE 30 to 40 minutes or until toothpick inserted in center comes out clean. Cool completely in pan on wire rack. Remove cake from pan; place on large plate or tray. Decorate with decorating icing and candies as desired. Sprinkle with powered sugar. Cut into 16 squares to serve.

This cake can be made ahead. A moist cake is covered with rich butterscotch ice cream topping, whipped topping and crushed candy bars.—Shelley McKinney, New Castle, Indiana

Ingredients

* 1 package (18-1/4 ounces) chocolate cake mix
* 1 jar (17 ounces) butterscotch ice cream topping
* 1 carton (8 ounces) frozen whipped topping, thawed
* 3 Butterfinger candy bars (2.1 ounces each), coarsely crushed

Directions
Prepare and bake cake according to package directions, using a greased 13-in. x 9-in. baking pan. Cool on a wire rack for 30 minutes. * Using the end of a wooden spoon handle, poke 12 holes in warm cake. Pour butterscotch topping over cake; cool completely. * Spread with whipped topping; sprinkle with candy. Refrigerate for at least 2 hours before serving. Refrigerate leftovers. Yield: 12-16 servings.

1-1/2 cups boiling water, divided
2 pkg. (4-serving size each) JELL-O Raspberry Flavor Sugar Free Gelatin
1 cup vanilla low-fat yogurt
1/2 cup raspberries
1 can (8 oz.) peach slices in juice, undrained
Cold water
Make It

STIR 3/4 cup of the boiling water into 1 pkg. of the dry gelatin mix in medium bowl at least 2 min. until completely dissolved. Refrigerate 1 hour or until slightly thickened. Stir in yogurt and raspberries. Pour into 1-1/2-qt. serving bowl. Refrigerate 1-1/2 hours or until set but not firm.

MEANWHILE, drain peaches, reserving juice. Add enough cold water to reserved peach juice to measure 1 cup; set aside. Stir remaining 3/4 cup boiling water into remaining pkg. of gelatin in large bowl at least 2 min. until completely dissolved. Stir in reserved juice mixture. Refrigerate 1 hour or until slightly thickened.

RESERVE several peach slices for garnish. Chop remaining peaches; stir into thickened gelatin. Spoon over creamy layer in bowl. Refrigerate 3 hours or until firm. Top with the reserved peach slices just before serving. Garnish with fresh mint leaves, if desired.
